Maʿṣūbah, Muqarras, and Muʾazzarah are among the popular traditional dishes of the southern regions of the Kingdom. These dishes rely on hands-on preparation using special traditional tools, making them a culinary practice passed down through generations as much as they are food recipes.

Several local tools are used in their preparation, most notably the khafāqah, a metal utensil with twisted blades used for mixing ingredients, and the miswāṭ, a long, forked wooden stick used to stir the mixture during cooking. These dishes depend on a technique known as ʿaṣd, which involves continuous stirring over low heat until the mixture reaches its well-known firm and cohesive consistency.
